Who We Are
Manuel Guillen
Owner and Head Coach Manuel Guillen has been learning and teaching Mixed Martial Arts since 2005. He served as President of Greyhound MMA for two consecutive terms, the maximum allowed. After a hiatus during which he pursued a career in education for special populations, Manuel returned to MMA as both an athlete and coach and opened Varsity Academy in 2018. Manuel competes frequently, earning podium positions in all tournaments during the last three years.
Moriah Lovato
Moriah Lovato has been a mixed martial arts practitioner since 2017. She holds certifications in sports nutrition, youth training, senior training and corrective exercise and holds a Bachelor's degree in Exercise Science. In 2018, she won gold at the AGF NM State Championships in jiu jitsu.

Varsity Academy trains and manages honorable athletes who endeavor to improve their health and mixed martial arts skills by using professional instruction built on the pillars of safety, education, patience, and respect.
